Chinese Coleslaw

Great summer salad. You can easily make this into a meal by adding a Roasted Chicken (skinned and shredded) from the deli.

1 pkg instant ramen soup - oriental flavor
1 Tbsp butter
16 oz bag coleslaw mix or 1 bag broccoli slaw mix
1 bunch green onions
1/2 cup sunflower seeds
1/2 cup slivered almonds

dressing:
1/4 cup each vegetable oil and toasted sesame oil
3 Tbsp each sugar and balsamic vinegar
seasoning pkt from ramen soup

Break apart noodles from soup pkg - be careful not to grind them with hands. In small frying pan, melt butter - add noodles and cook, stirring until browned. Remove-set aside. Add sunflower seeds and almonds to pan. Cook stirring until lightly browned. Set aside. Add green onions to pan. Cook until limp.

Combine all dressing ingredients and stir (or shake). In a serving bowl combine all salad ingredients. Add dressing just before serving and toss.

Ice Pak/"Boo-Boo Bag"

This is something that's good for everyone to keep in the freezer. You never know when your husband may come home from work (like mine did this morning) with horrible back pain or one of your children falls, bumps heads.....etc. It's easy and inexpensive. You could easily break this down into several small freezer bags to have "boo-boo bags" on hand for the kids. Sometimes that's all they need is a little "boo-boo bag."

ICE PAK
2-gallon size freezer zip lock bags

First bag add 4 cups of water and 1-1/2 cups of Rubbing Alcohol (no or as little air as possible)

Put the first bag into the second bag and put in the freezer for 24 hours. When it's cold it's not frozen hard and you're ready to heal any boo-boo Daddy size or child size. : )

Apple Crisp Oven Pancakes

My mother made this for mother's day brunch yesterday. I had to share it. Everyone loved it.

Apple Crisp Oven Pancakes
from Deer Creek Inn
Chuck and Elaine Matroni, Innkeepers
Nevada City, CA

Topping mixture:
1/4 cup Bisquick mix
1/4 cup brown sugar (I used Date Sugar and it was delicious!!)
1/4 tsp cinnamon
1/2 cup oats
2 Tbsps soft butter
Mix and reserve.

Pancake mixture:
2 cups Bisquick mix
3/4 cup milk
1/4 tsp vanilla
1 large fress egg
3/4 cup chunky applesauce (I used regular with NO sugar)

Grease jelly roll pan: 15 1/2 x 10 1/2 x 1
Beat all ingredients with wire whisk or hand beater until well blended.
Pour batter into pan and sprinkle with oat mixture. Bake for 14 to 16 minutes,
or until
golden brown. Immediately cut into 2 or 3 inch squares and serve with warm maple
syrup.
Makes 6 servings.
