Chicken Bolognese

Here is our family favorite! Another Michael Chirarello recipe. It takes some time, but it is worth every minute. Like I told Michael Chiarello when I met him, I can get my husband to do anything when I make this dinner.

If you don't have a meat grinder, ask your grocery store butcher if they can grind one pound of boneless skinless chicken thighs for you. Nob Hill has done it for me when I didn't want to take the time to grind the meat myself.
